No-Bake Energy Bites
Ingredients:
1 cup quick oats (use gluten-free oats if you want to for these to be gluten-free)
1/2 cup natural peanut butter (or any nut butter of your choice)
1/4 cup agave nectar (you can also use honey or maple syrup)
1 tbs. melted coconut oil
1 tbs. chia seeds
2 tbs. flax seed meal
3 tbs. mini chocolate chips or raisins, nuts, dried fruits or shredded coconut
pinch of salt
1/4 tsp. ground cinnamon
Directions:
In a large bowl, mix together all of the ingredients until well combined. Cover and refrigerate the mixture for about 30 minutes. Using your hands, roll the mixture into balls--about 1-1 1/2-inch in diameter. Place the bites into an airtight container and store in the refrigerator for about 1 week.

Dip your carrots or celery in your favorite flavor of hummus for a nutritionally packed snack. Just don't eat too much hummus!!

1 apple, cut in to slices
1/4 c water

Cut one apple in to slices and place in a microwaveable bowl. Add 1/4 cup water. Cover and microwave for 2 minutes. Top with cinnamon.

Cucumber Salsa
Ingredients:
2 cups finely chopped seeded peeled cucumber
1/2 cup finely chopped seeded tomato
1/4 cup chopped red onion
2 Tbsp minced fresh parsley
1 jalepeno pepper, seeded and chopped
4-1/2 tsp minced fresh cilantro
1 garlic clove, minced or pressed
1/4 c reduced-fat sour cream
1-1/2 tsp lemon juice
1-1/2 tsp lime juice
1/4 tsp ground cumin
1/4 tsp seasoned salt
Tortilla chips

8 ounces fat free cream cheese, softened
3/4 cup dill pickles - drained and finely chopped
5 ounces dried beef
Directions:
Stir cream cheese in bowl until smooth. Stir in pickles and beef. Cover and chill in refrigerator at least 2 hours. Serve with crackers.

Skinny Taco Dip

Ingredients:
8 oz fat free cream cheese
8 oz fat free sour cream
16 oz jar mild salsa
1 packet taco seasoning
2 cups iceberg lettuce, shredded
2 large tomatoes, diced
1 cup reduced fat shredded cheddar cheese
2.25 oz black olives
Directions:
In a large bowl combine cream cheese, sour cream, salsa and taco seasoning and mix well with an electric mixer. Spread on the bottom of a large shallow glass dish. Top with shredded lettuce, tomatoes, shredded cheese and black olives. Serve with baked tortilla chips.

Ground cinnamon
Salt

Slice bananas very thin (1/8") and brush with lemon juice mixed with just a little water. Sprinkle with cinnamon and kosher salt. Bake at 250 degrees for about 2 hours, turning after 90 mins. Let cool (the longer they cool the crispier they become).
