Philly Cheese Turkey Sloppy Joes
Ingredients:
1 lb ground turkey
1 large white onion, diced
1 green bell pepper, diced
1/4 cup steak sauce
1 can fat free reduced sodium beef broth (approx. 2 cups)
Salt & black pepper to taste
8 wheat sandwich thins
8 slices reduced fat provolone cheese
Directions:
In large skillet, brown the ground turkey. Add the onion and green pepper and cook another 3-4 minutes, until the vegetables start to get tender. Stir in the steak sauce and beef broth, season with salt and pepper, bring up to a bubble and cook about 2 minutes (Most of the liquid will have evaporated). On a baking sheet, layout buns - separating the tops from the bottoms. On the bottom half, spoon approx. 1/2 cup of the meat mixture and then top with 1 slice of cheese. Broil open faced sandwiches (this will just toast the top) until cheese is good and melty! Remove from oven, assemble, enjoy!

Greek Turkey Burgers
Recipe Note: If you buy the sundried tomatoes in the jar, make sure and squeeze out the excess oil using a paper towel.

1/2 Cup crumbled reduced fat feta cheese
1/4 Cup sun-dried tomatoes
1/2 Cup fresh baby spinach leaves, chopped
1 teaspoon oregano
1/2 teaspoon garlic powder
salt and pepper to taste
Whole wheat buns
For Tzatziki:
6 oz fat free Greek Yogurt
Juice of 1/2 of a medium lemon
1 med cucumber, peeled
3 large cloves garlic, minced
Garlic Salt, to taste
Cracked Black Pepper, to taste
Directions:
For Greek Turkey Burgers:
Place turkey, feta, sun dried tomato, spinach and seasonings into a mixing bowl. Mix until just combined. Form patties and place onto a cookie sheet. Once all are formed, cook however you like to cook burgers. Grill (indoor or out), cook in hot skillet, or broil under broiler. Cook for 3-4 minutes per side or until an internal thermometer has reached 165 degrees. Garnish with Tzatziki and additional spinach leaves.
For Tzatziki:
Slice cucumber in half, length wise. Using a spoon, scrape out seeds. Finely shred cucumber and place in paper towels and squeeze out extra moisture.
Then combine Greek yogurt, lemon juice, shredded cucumber, garlic, garlic salt, and pepper. Refrigerate in an air tight container for 1 hour before serving.
For 1 burger topped with 1/4th of Tzatziki: Calories: 210 Fat: 3.6 Carb: 8.7 Fiber: .3 Protein: 33

Grilled Pineapple Turkey Burgers

Ingredients:
20-oz package extra lean ground turkey
¼ cup red bell pepper, chopped
¼ cup red onion, chopped
¼ tsp ground black pepper
1 tsp thyme seasoning
4 pineapple slices, approx 1/2 inch thick
Whole wheat sandwich buns of your choice
Directions:
1. Preheat the grill to medium-high.
2. Combine ground turkey, pepper, onion, black pepper, and thyme in large bowl and mix thoroughly until all ingredients are well distributed.
3. Divide turkey mixture into 4 equal portions and form into burger patties.
4. Put on a plate; grab the 4 pineapple slices and head to the grill.
5. Place the burgers and the pineapple slices on the grill (the pineapple will cook for the same amount of time as the burgers to soften up).
6. After approximately 8 minutes, flip the burgers and the pineapple slices (the underside should be nice and brown).
7. After approximately 4 minutes, place one pineapple slice onto the top of each burger.
8. Cook for an additional 3-5 minutes, or until burgers are cooked thoroughly and no longer pink in the center.
9. Turn off the grill. Using a long spatula, carefully remove the burgers from the grill (don’t lose those pineapples!) and onto a plate.

Spicy Turkey Meatballs

Ingredients: (makes about 23 meatballs)
Olive oil for
cooking
1 pound ground turkey
2 chipotle in adobo peppers, seeds removed, finely chopped
2 Laughing Cow Cheese Light Mozzarella Sundried Tomato wedges
16 basil leaves, chopped
2 garlic cloves, minced
Salt & pepper
1/4 red onion, chopped finely
Directions:
Combine all ingredients together other than olive oil. Form uniform meatballs. Heat olive oil in a nonstick pan. Add meatballs and cook them till they are browned all around and are cooked through. This should take about 10-12 minutes total.
